THE RECIPE

Ingredients & preparation

Check off ingredients as you go, then follow each step.

Ingredients

Preparation steps

  1. 1

    Prepare the beans.

Open and thoroughly rinse the canned beans in a colander. Allow them to drain while you prepare the remaining ingredients.

  2. 2

    Chop the vegetables.

Use a vegetable chopper to quickly dice the cooked beets, red onion, and jalapeño into small, uniform pieces.

  3. 3

    Combine the ingredients.

Add the drained beans, diced beets, pomegranate arils, cilantro, red onion, jalapeño, oil, lime zest and juice, cumin, coriander, and salt to a large mixing bowl.

Mix thoroughly until everything is evenly combined.

  4. 4

    Add the feta.

Gently fold in the crumbled feta until incorporated.

For a vegan version, use diced avocado instead. If preparing ahead, consider adding the avocado just before serving to help preserve its color and texture.

  5. 5

    Store and enjoy!

Transfer to an airtight container and refrigerate. Enjoy within 5 days, keeping food safety and freshness in mind.

Notes & tips

Kitchen Hacks & Cooking Tips

  • Switch up the oil: Try a flavor-infused olive or avocado oil for additional depth.
  • Mellow the onion: If raw red onion is usually too strong for your taste, rinse it under cold water after chopping and drain before adding it to the mixture.
  • Chop cilantro faster: Cut the bunch in half, then stack the stems over the leaves to make chopping easier. Tender stems are perfectly fine to use!
  • Reduce onion tears: Leave the root end intact while cutting your onion. It may help reduce the amount of irritating compounds released while chopping.
  • Use a kitchen scale: Weighing ingredients saves measuring cups and spoons and makes cleanup easier. For example, ½ cup of oil is approximately 110 grams.
